Reuben Chicken

My Mom mentioned that she made the Reuben Chicken casserole for dinner about a week ago.  Ever since she said that, I have been craving it!!!  This is a recipe that Candy gave me at least 10 years ago... I made it for my Mom over 9 years ago when she came to Japan to visit when Brett was born....  Good Grief, time flies...

This is a recipe that I always make from memory, but it has been soooooo long, I thought I better figure it out and write it down and stick it in my book.  Of course you can adjust any of the amounts as desired.

This is my shot at the recipe, Candy... Please correct as needed:

Place three chicken breasts in a 9x13 baking pan.
Pour a can of sour kraut over.
Pour an 8 ounce bottle of Thousand Island dressing over.
Top with Cheese ( I don't remember what the recommended cheese is, maybe it was shredded parmesan....  I think I only have cheddar in the freezer so I'll use it.)

Bake at 350 degrees for 45 minutes.

I hope that is close. Well, I don't have any thousand Island dressing, so I googled it and found this:

THOUSAND ISLAND DRESSING

1 c. mayonnaise
1/3 c. ketchup
1/4 c. pickle relish
1 tbsp. chopped onion
1 hard cooked egg, chopped

Mix all ingredients together well. Cover and chill.
Makes 2 cups.

To make Russian Dressing add some
chili sauce to the Island dressing.

As it may be, and always is.... I never keep good stock of groceries so I had to make some changes.  I don't have any pickle  relish, so I substituted with zucchini relish that I had canned (YAY!!!).  We are out of eggs also, so I simply left the egg out.  Being my Serbian self, I added a teaspoon of minced garlic and doubled the onion!!!  It tastes really good!!!  So, it is in the fridge chilling and the chicken is thawing, so I'm really excited about making dinner tonight!!!

that is tooooo cool. i just made little knitted hats for my gourds to make them into snowmen. i am going to make a couple of the little sweaters. thanks a bunch
